Instructions

01
Before beginning, ensure all your frozen fruits are ready and your tall glasses are chilled in the freezer for at least 15 minutes. This helps the layers set better.
02
Start with the purple layer: In a blender, combine frozen blueberries, blackberries, coconut milk, yogurt, honey, and lemon juice. Blend until smooth but still thick (think milkshake consistency).
03
Carefully pour the purple mixture into the bottom of each chilled glass, filling about 1/6 of the glass. Place glasses in the freezer for 5 minutes to set slightly.
04
Rinse the blender thoroughly between each layer to prevent color mixing.
05
For the blue layer: Blend the blue spirulina powder, frozen banana, coconut milk, yogurt, and honey until smooth and thick.
06
Remove glasses from freezer and slowly spoon the blue mixture over the back of a spoon onto the purple layer to create a clean separation. Return glasses to freezer for 5 minutes.
07
For the green layer: Blend frozen kiwi, pineapple chunks, coconut milk, yogurt, honey, and spinach (if using) until smooth.
08
Repeat the layering process with the green mixture, then return to freezer.
09
Continue with the yellow layer: Blend mango, pineapple, coconut milk, yogurt, and honey until smooth. Layer onto the green mixture and freeze again.
10
For the orange layer: Blend papaya, peach, coconut milk, yogurt, and honey. Add to glasses and return to freezer.
11
Finally, prepare the red layer: Blend strawberries, raspberries, coconut milk, yogurt, and honey. Add as the final layer to the glasses.
12
Garnish with fresh fruit slices around the rim of the glass, add edible flowers, mint leaves, a sprinkle of coconut flakes, and a drizzle of honey.
13
Serve immediately with colorful paper straws for the most impressive presentation, or store in the refrigerator for up to 30 minutes before serving.
