Instructions

Heat 1 tbsp of olive oil in a large skillet over medium heat. Add sliced onions and cook until caramelized, about 8-10 minutes. Stir occasionally.

Add minced garlic and cook for 30 seconds until fragrant. Remove the onions and set aside.

Increase heat to medium-high and add the remaining 1 tbsp olive oil. Add shaved steak, season with salt, black pepper, smoked paprika, Worcestershire sauce, and soy sauce. Cook, stirring frequently, until browned and cooked through, about 4-5 minutes.

Return the caramelized onions to the pan and mix with the steak. Reduce heat to low and place slices of provolone cheese on top. Cover the pan for 1-2 minutes until the cheese melts.
