Baking Tips
For a stronger ginger flavor, grate some of the ginger instead of slicing it all.
Try using different tea varieties as your base – white tea offers delicacy, while rooibos provides a caffeine-free alternative.
Make a sparkling version by substituting some of the cold water with sparkling water just before serving.
For a cocktail version, add 1 oz of gin or vodka per glass.
Prepare a concentrated version (without the additional cold water) to make tea ice cubes that won't dilute your drink.

Ingredients

Custard Cream
01
6 cups filtered water, divided
02
6 black tea bags (or 3 tablespoons loose leaf black tea)
03
2 oranges (1 sliced for infusion, 1 for garnish)
04
3 sprigs fresh rosemary, plus extra for garnish
05
2-inch piece fresh ginger, peeled and thinly sliced
06
1/3 cup honey or maple syrup (adjust to taste)
07
1 tablespoon orange zest
08
Ice cubes for serving
09
Orange wheels for garnish
10
Rosemary sprigs for garnish
11
Crystallized ginger for garnish (optional)

Instructions

01
Bring 4 cups of water to a boil in a medium saucepan. Once boiling, remove from heat.
02
Add tea bags (or loose tea in an infuser), sliced orange, 3 sprigs of rosemary, and sliced ginger to the hot water. Cover and let steep for 5-7 minutes.
03
Remove tea bags (or infuser). For a stronger flavor, you can leave the orange slices, rosemary, and ginger to continue infusing.
04
While still warm, add honey or maple syrup and orange zest. Stir until sweetener is completely dissolved.
05
Add remaining 2 cups of cold water to the tea mixture and stir to combine.
06
Transfer to a glass pitcher and refrigerate until thoroughly chilled, at least 2 hours or overnight for deeper flavor.
07
Strain the tea mixture to remove orange slices, rosemary sprigs, and ginger pieces.
08
To serve, fill glasses with ice cubes and pour the chilled tea over ice.
09
Garnish each glass with a fresh orange wheel and a small sprig of rosemary. Add a piece of crystallized ginger on the rim if desired.
