In a large glass or non-reactive pot, combine the sliced okra, filtered water, apple cider vinegar, ginger slices, lemon rounds, lime rounds, lemongrass, and mint sprigs.

Bring the mixture to a gentle simmer over medium-low heat. As soon as it reaches a simmer, reduce heat to low and cook for 5 minutes.

Remove from heat, stir in honey (or maple syrup) and sea salt until dissolved. Cover and let steep for 1 hour at room temperature.

After steeping, strain the mixture through a fine-mesh sieve into a large bowl, gently pressing on the solids to extract maximum flavor. Discard solids.

Transfer the strained liquid to a glass jar or container and refrigerate for at least 2 hours or overnight to chill thoroughly and allow flavors to develop.
