Baking Tips
For best texture, cook each seafood type separately if you have time, as they have different cooking times
The pasta water's starch helps emulsify the sauce – don't forget to reserve some before draining
Fresh herbs are essential for the signature 'ocean mist' flavor; dried herbs won't provide the same aromatic quality
Toast pine nuts in a dry skillet over medium heat for 2-3 minutes until golden for enhanced flavor
For a creamier version, add 1/4 cup of heavy cream to the sauce after reducing the wine
Don't overcook seafood – it continues cooking slightly from residual heat after being removed from the pan
Use high-quality, fresh seafood for best results – frozen can work but may release excess water
The sauce should lightly coat the pasta, not drown it – add pasta water gradually to achieve the right consistency
For a stronger sea flavor, add 1 tablespoon of anchovy paste when sautéing the garlic
This dish is best served immediately after cooking as the pasta continues to absorb the sauce over time
Substitute the seafood mix with just one type if you prefer, adjusting quantities accordingly
For a gluten-free option, use rice pasta or zucchini noodles, adjusting cooking times as needed

Extra virgin olive oil for drizzling

Fresh herbs for garnish

Instructions

01
Bring a large pot of water to a boil. Add salt and cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
02
While the pasta is cooking, prepare the seafood. Pat shrimp, scallops, and calamari dry with paper towels.
03
In a large skillet, heat olive oil over medium-high heat. Add garlic and red pepper flakes, cooking for 30 seconds until fragrant.
04
Add scallops to the pan first, cooking for 1-2 minutes without moving them to allow for proper searing.
05
Add shrimp and calamari to the pan. Season with salt and pepper. Cook for 2-3 minutes, stirring occasionally, until shrimp are pink and seafood is just cooked through. Remove seafood from pan and set aside.
06
In the same pan, reduce heat to medium and add butter. Once melted, add white wine and stock, scraping up any browned bits from the bottom of the pan.
07
Simmer for 2 minutes to reduce slightly, then add lemon zest, lemon juice, and capers.
08
Add the drained pasta to the pan along with 1/4 cup of the reserved pasta water. Toss to coat the pasta in the sauce.
09
Return the seafood to the pan, add the chopped herbs, and toss gently to combine. If the sauce seems too thick, add more pasta water, a tablespoon at a time.
10
Cook for another minute to heat everything through and allow the flavors to meld.
11
Remove from heat and transfer to a large serving bowl or individual plates.
12
Garnish with freshly grated Parmesan cheese, toasted pine nuts, a drizzle of extra virgin olive oil, and additional fresh herbs.
13
Serve immediately with lemon wedges on the side.
