Preheat oven to 375°F (190°C). Cook lasagna noodles according to package directions until al dente. Drain and set aside.

Heat olive oil in a large skillet over medium-high heat. Add ground beef and Italian sausage, breaking up with a spoon. Cook until browned, about 8-10 minutes.

Add diced onion to the meat and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.

Stir in tomato paste and cook for 1 minute. Add red wine (if using) and let it cook off for 2 minutes.

Add crushed tomatoes, tomato sauce, basil, oregano, thyme, salt, pepper, and red pepper flakes. Simmer for 20-25 minutes, stirring occasionally.

In a large bowl, combine ricotta cheese, eggs, 1/2 cup Parmesan cheese, parsley, salt, and pepper. Mix until well combined.

Spread 1 cup of meat sauce in the bottom of a 9x13 inch baking dish.

Layer 4 lasagna noodles over the sauce. Spread 1/3 of the ricotta mixture over noodles, then 1/3 of remaining meat sauce, and 1 cup mozzarella cheese.

Repeat layers twice more: noodles, ricotta mixture, meat sauce, and mozzarella cheese.

Top with final layer of noodles, any remaining meat sauce, remaining mozzarella, and 1 cup Parmesan cheese.

Cover tightly with aluminum foil and bake for 45 minutes. Remove foil and bake for 15 minutes more until cheese is golden and bubbly.
