Baking Tips
For extra depth of flavor, add a tablespoon of cocoa powder or a shot of espresso to the chili while simmering.
Replace some or all of the ground beef with ground turkey for a lighter version.
For thicker chili, simmer uncovered during the last 30 minutes of cooking time.
This chili tastes even better the next day after flavors have had time to meld.
Freeze individual portions for quick weeknight meals - will keep well frozen for up to 3 months.
Try adding a can of corn during the last 15 minutes of cooking for added texture and sweetness.
Serve over rice, pasta, or baked potatoes for a hearty variation.

09
1/2 tsp black pepper
10
1/2 tsp cayenne pepper (optional, adjust to taste)
11
For the base:
12
1 large onion, diced
13
2 bell peppers, diced
14
3 cloves garlic, minced
15
2 tbsp olive oil
16
2 cans (15 oz each) kidney beans, drained and rinsed
17
1 can (15 oz) black beans, drained and rinsed
18
1 can (28 oz) crushed tomatoes
19
1 can (14.5 oz) diced tomatoes
20
1 cup beef broth
21
2 tbsp tomato paste
22
Optional toppings: shredded cheese, sour cream, diced avocado, chopped cilantro, lime wedges

Instructions

01
Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.
02
Add the ground beef and cook until browned, breaking it up with a spoon as it cooks, about 7-8 minutes.
03
In a small bowl, mix all spice blend ingredients until well combined.
04
Add the diced onion and bell peppers to the pot with the beef and cook until softened, about 5 minutes.
05
Add the minced garlic and spice blend to the pot, stirring constantly for about 1 minute until fragrant.
06
Pour in the beef broth, scraping the bottom of the pot to release any browned bits.
07
Add the crushed tomatoes, diced tomatoes, tomato paste, kidney beans, and black beans. Stir to combine.
08
Bring the mixture to a boil, then reduce heat to low and simmer, partially covered, for at least 1 hour (preferably 2 hours for deeper flavor), stirring occasionally.
09
Taste and adjust seasonings if needed, adding more salt, pepper, or chili powder to taste.
10
Serve hot with your choice of toppings such as shredded cheese, sour cream, diced avocado, chopped cilantro, and lime wedges.
