Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or aluminum foil, or lightly grease a large baking dish.

In a large bowl, combine halved potatoes with 2 tablespoons olive oil, 1/2 cup grated Parmesan cheese, half the minced garlic, 1 tablespoon each of chopped rosemary and thyme, 1 teaspoon salt, and 1/2 teaspoon black pepper. Toss until the potatoes are evenly coated.

Arrange the seasoned potatoes in a single layer around the edges of the prepared baking sheet or dish, leaving space in the center for the pork. Place in the oven and roast for 15 minutes while you prepare the pork.

Meanwhile, if using pork loin, trim any excess fat. For tenderloin, remove any silver skin. Pat the pork dry with paper towels.

In a small bowl, combine the remaining olive oil, remaining minced garlic, 1/4 cup Parmesan cheese, remaining rosemary and thyme, Italian seasoning, garlic powder, onion powder, Dijon mustard, melted butter, lemon juice, lemon zest, remaining salt and pepper, and red pepper flakes if using.

Place the pork in the center of a separate plate or board and rub the garlic-herb mixture all over the meat, coating it thoroughly.

After the potatoes have roasted for 15 minutes, remove the baking sheet from the oven. Make space in the center and place the seasoned pork loin in the middle.

Return to the oven and roast for 25-30 minutes for pork tenderloin or 30-35 minutes for pork loin, or until the internal temperature of the pork reaches 145°F (63°C) and the potatoes are golden and crispy.

During the last 5 minutes of cooking, sprinkle the remaining 1/4 cup of Parmesan cheese over both the pork and potatoes.

Once done, remove from the oven and let the pork rest for 5-10 minutes before slicing.

Sprinkle the entire dish with fresh chopped parsley before serving.

Slice the pork into medallions and serve alongside the roasted potatoes with lemon wedges for squeezing over the top.
