To the third bowl, add beetroot powder (and optional purple sweet potato powder) for a reddish-purple hue. Knead each until the color is uniform.

Lightly oil a large bowl. Take small pieces from each colored dough and the plain dough, placing them randomly in the bowl. Don't mix them together yet. Cover with plastic wrap and let rise in a warm place for 60-90 minutes, until doubled in size.

While the dough rises, place a pizza stone or steel in the oven and preheat to 500°F (260°C) for at least 45 minutes before baking. Prepare the sauce by mixing tomato sauce, tomato paste, oregano, basil, and garlic powder in a small bowl.

After the dough has risen, gently turn it out onto a lightly floured surface. Divide into two equal portions for two pizzas. Gently shape each portion into a ball, being careful not to overmix the colors – you want distinct swirls, not a uniform color.
