Italian Cream Stuffed Cannoncini

Ingredients

Custard Cream
01
16 ounces high-quality chocolate (milk, dark, or semi-sweet), divided
02
2 tablespoons coconut oil, divided
03
2 cups powdered sugar
04
1/4 cup unsweetened cocoa powder
05
1/4 cup butter, softened
06
3 tablespoons heavy cream
07
1 teaspoon vanilla extract
08
1/4 teaspoon salt
09
Assorted food coloring (optional, for decorating)
10
4 ounces white chocolate for decorating (optional)
11
Sprinkles or decorative sugar (optional)

Instructions

01
Melt 10 ounces of chocolate with 1 tablespoon coconut oil using a double boiler or microwave in 30-second intervals, stirring between each interval until smooth.
02
Using an egg-shaped chocolate mold, brush a thin layer of melted chocolate inside each cavity. Make sure to coat all surfaces. Place in the refrigerator for 5 minutes to set.
03
Apply a second coat of chocolate to the molds, ensuring it's thick enough to support the filling. Return to refrigerator for another 10 minutes to fully set.
04
While chocolate shells are setting, prepare the fudge filling. In a mixing bowl, combine powdered sugar, cocoa powder, softened butter, heavy cream, vanilla extract, and salt. Beat until smooth and fudgy.
05
Once the shells are set, carefully fill each chocolate egg mold with the fudge filling, leaving about 1/8 inch space at the top for sealing.
06
Melt the remaining 6 ounces of chocolate with 1 tablespoon coconut oil, and spread it over the filling to seal the eggs.
07
Refrigerate for at least 2 hours or until completely set.
08
Carefully remove the eggs from the molds by gently flexing the molds or tapping them lightly.
09
If desired, melt white chocolate and color with food coloring to decorate the eggs. Drizzle over the eggs and add sprinkles before the chocolate sets.
10
Store in an airtight container in a cool place or refrigerate for up to 2 weeks.
