Make the strawberry puree: In a small saucepan, combine quartered strawberries, 2 tablespoons sugar, lemon juice, and 1 tablespoon water. Cook over medium heat for 5-7 minutes, stirring occasionally, until strawberries break down and become syrupy.

Remove from heat and let cool for 5 minutes. Using a fine-mesh strainer, strain the mixture into a bowl, pressing the solids to extract as much liquid as possible. Discard the pulp or save for another use. Set the strawberry syrup aside.

Prepare the tea: Bring 4 cups of water to a boil in a large pot or kettle.

Remove from heat and add tea bags or loose tea. Steep for 5-7 minutes for a strong tea base that won't be diluted when mixed with ice and strawberry puree.
