1/4 cup (85g) honey, plus more for drizzling

2 tablespoons fresh thyme leaves, divided

1/4 cup (30g) chopped pistachios or walnuts

Preheat oven to 375°F (190°C). Lightly grease a 24-cup mini muffin tin.

Carefully unroll the fillo dough and cover with a slightly damp kitchen towel to prevent it from drying out while working.

Take one sheet of fillo dough and place it on a clean work surface. Brush lightly with melted butter.

Place another sheet on top and brush with butter again. Repeat until you have a stack of 4 sheets.
