For the cheesecake filling, beat the cream cheese with powdered sugar and vanilla extract until smooth and creamy.

Add the sour cream and continue to mix until fully incorporated. Set aside.

For the chocolate shell, melt the semi-sweet chocolate in a heatproof bowl over simmering water or in the microwave, stirring every 20 seconds.

Once melted, stir in the heavy cream and butter until smooth and glossy.

Spoon a small amount of the melted chocolate into each muffin tin or silicone mold, enough to coat the bottom and sides.
