16
Optional Mix-ins:
17
1/4 cup mini marshmallows
18
2 tablespoons rainbow sprinkles
19
1/4 cup white chocolate chips

Instructions

01
In a medium saucepan, combine heavy cream and milk. Heat over medium heat until small bubbles form around the edges (do not boil). Remove from heat.
02
In a large bowl, whisk egg yolks and sugar until pale and thick, about 3-4 minutes.
03
Slowly pour about 1/2 cup of the hot cream mixture into the egg yolks, whisking constantly to temper the eggs.
04
Continue adding the cream mixture gradually, whisking constantly, until all is incorporated.
05
Return the mixture to the saucepan and cook over medium-low heat, stirring constantly with a wooden spoon, until it coats the back of the spoon (170°F).
06
Remove from heat and immediately strain through a fine-mesh sieve into a clean bowl.
07
Stir in vanilla extract, almond extract, lemon extract, raspberry extract (if using), cotton candy flavoring, marshmallow extract, and salt.
08
Add blue food coloring gradually until you achieve the desired bright blue color. Start with a few drops and add more as needed.
09
Stir in corn syrup if using. Cover with plastic wrap pressed directly onto surface and refrigerate for at least 4 hours or overnight.
10
Churn in an ice cream maker according to manufacturer's instructions, usually 20-25 minutes.
11
In the last few minutes of churning, add any desired mix-ins like mini marshmallows or sprinkles.
12
Transfer to an airtight container and freeze for at least 2 hours before serving for best texture.
